Elephant garlic produces huge cloves with a very mild flavour similar to a leek. It can be used raw in salads and becomes sweet like an onion when cooked. Use it fresh, chopped, minced, or shaved on top of a dish or salad. It needs to be used within a few weeks of harvest.
